Protein Pudding

Ingredients for 2 servings

2 large eggs

80g chocolate protein powder

2tsp raw cacao

2 tsp baking powder

1 banana

Berries / natural yogurt to serve


  1. Mash the banana in a bowl and then add all the other ingredients, mixing thoroughly.
  2. Coat two ramekins in coconut oil (this mixture makes two large or four smaller servings)
  3. Add the mixture to the ramekin
  4. Microwave on high for about a minute then repeat once or twice more until the top is firm and a knife comes out clean
  5. Let the pudding cool, turn out and serve with the berries and yogurt
